Kamikoto knives are sharpened at a 10-15 degree angle within the factory (20-30 on both sides) for Japanese-style knives and their European-style knives are sharpened at an 18-22 degree angle. One of my favorite tests to put onto a knife to test out the sharpness in the paper cutting test. In which, I put the paper vertically and try to slash through it with the blade. And sure enough, the Kamikoto Santoku knife passed this test with ease and cut the paper completely from head to toe. Sure enough, you can find sharper knives than these on the market, but unless you work as a sushi chef, this amount of sharpness should be completely optimal for you.

This thin blade works as a perfect candidate for a long-lasting knife. The knife itself does not dull throughout the years of its use.
